You'll need
- 1 cup water
- 1 cup milk
- 2 tsp tea leaves
- 1 inch fresh ginger, crushed
- 2 tsp sugar (or to taste)
Method
- Boil the water with the crushed ginger for 2 minutes.
- Add the tea leaves and let them simmer for 1 minute.
- Pour in the milk and sugar.
- Let it rise and settle twice on a medium flame, about 3 minutes.
- Strain into cups and serve hot.

- 3 green cardamom pods, lightly crushed
- 2 tsp sugar
Method
- Boil the water with the crushed cardamom for 1 minute.
- Add the tea leaves and simmer for 1 minute.
- Add the milk and sugar and bring to a boil.
- Simmer for 2 more minutes until it turns a rich caramel colour.
- Strain and serve.

- 2 cardamom pods, 2 cloves, 3 black peppercorns
- Small piece of cinnamon
- ½ inch ginger
- 2 tsp sugar
Method
- Lightly crush the spices and ginger.
- Boil them in the water for 3 minutes to release the flavour.
- Add the tea leaves and simmer for 1 minute.
- Add the milk and sugar and boil for 2 to 3 minutes.
- Strain and serve piping hot.

You'll need

- ½ cup milk
- 3 tsp strong tea leaves
- 3 tsp sugar
- A pinch of crushed ginger
Method
- Boil the water, ginger, tea leaves and sugar together for 2 minutes.
- Add the milk and boil hard for 2 to 3 minutes until dark and thick.
- Strain into small glasses, half full.
